I miss pasta! No lie, in my quest to get healthy I am low carb-ing and I miss my pasta dishes so, so much. But alas- there is the Veggetti! While I may be a bit late to the party with this ‘As Seen On TV’ product- I am just happy I have it in my life now. A Veggetti, for those who don’t know, is where you take zucchini or squash and make veggie noodles. They are delicious, but again I will not lie to you. They are delicious, yes a great substitute for pasta, but you still would rather have real pasta. However; it gets the job done!  I have used the Veggetti twice this week with zucchini and plan on trying with squash next.

I use about a medium sized zucchini and a half per serving and saute them in pan with about 2 tablespoons of olive oil and garlic if I am feeling frisky! I have added sauteed shrimp too and of course tomato sauce on occasion. The possibilities are endless and I just add what I want- ha!  If you don’t have a Veggetti- get one today- It gets my stamp of approval!
